1 1/2 cups whole wheat pastry flour
1/2 cup FoodThink Toasted Wheat Germ
1/4 teaspoon salt
3/4 cup sugar
1 teaspoon baking soda
1 1/2 cups mashed bananas (about 3 to 4 small)
1/2 cup walnut chopped
1/4 cup canola or vegetable oil
1/4 cup low-fat buttermilk
1 teaspoon vanilla extract
Make sure that your oven is preheated to 350° F. Grease bottom of a pan. It is ideal to use 9 x 4-inch loaf of the pan.In a large bowl, blend together flour, wheat germ, salt, sugar and baking soda. In a separate bowl, whisk together mashed banana, oil, buttermilk, egg, and vanilla.
Make a well in the centre of flour blended. Pour banana mixture into flour mixture also add walnut pieces in the mixture. Gently whisk until it gets combined.Make sure that you don't over mix.
Pour batter into Greased pan. Bake in preheated oven for 55 to 60 minutes.Now try to insert a toothpick or cake-tester into the centre if it comes out clean, it is cooked. Set aside to cool on a wooden plate for 10 minutes. Remove bread from pan, inverting onto rack to cool completely, or slice and serve warm.
