1/4 cup flour
1/2 cup plain crumbs
1/2 cup FoodThink Toasted Wheat Germ

1 pound skinless, boneless chicken breasts, thinly sliced
2 tablespoons canola oil, divided
Rinse the chicken and allow to dry. Season with salt and pepper and keep it aside at least for half an hour. So that chicken captures the taste.
Take a large bowl.Crack the eggs and whisk properly.Now in another large bowl, combine the panko and wheat germ.Mix them well.
Dip chicken into flour, remove excess flour by shaking it. Now dip chicken in eggs and then in the mixture of crumbs and wheat germ. Place coated pieces aside on a large plate. Now repeat with the remaining chicken.
Meanwhile, heat the 1 table oil in a nonstick pan over a high flame. Make sure that you spread the oil to all over the pan.Gently place two pieces of chicken in the pan.Cook until it gets brown and crispy but not burned.Flip over and cook for another side too. It may take 4-5 minutes still depends upon the thickness of chicken.
Take the chicken out of the pan and remove extra crumbs.Again add oil to the pan and cook the remaining chicken in small batches.
